Vegan Apple Pie French Toast
This Vegan Apple Pie French Toast is the perfect brunch! It’s full of cinnamon flavour, and topped with caramelised apples, vegan vanilla custard, pecans, and maple syrup. YUM. Not only is it delicious, but it’s also a great way to use up slices of bread that have passed their prime! Yay for minimising food waste!
This recipe is for one person but it is easily modified to a double serving etc if you want to serve it to others than just yourself! I hope you enjoy this incredible breakfast/brunch!
Vegan Apple Pie French Toast
Ingredients
French Toast Ingredients
- 2 slices of bread
- ¼ cup plant based milk (I used oat)
- 1 tbsp corn starch
- ⅛ tsp baking powder
- ½ tsp ceylon cinnamon
- 1 tsp maple syrup
- ½ tsp vanilla extract
- pinch of salt
- about 2 tbsp vegan butter for frying
Caramelised Apple
- 1 apple peeled
- ¾ tsp ceylon cinnamon
- ½ tsp cardamom
- 1 tbsp brown sugar coconut or raw whichever is preferred
- splash of vanilla
- 1 tbsp vegan butter to cook the apples in
Toppings
- vegan vanilla custard
- pecans
- maple syrup
Instructions
- Peel and slice an apple in thin slices.
- Whisk together all the ingredients and then dip the bread in the liquid for about 10 seconds on each side.
- Heat up a pan on medium heat for the apple slices and add the vegan butter then the apple slices and other apple topping ingredients. Flip the slices as they brown and soften.
- Then cook the bread for 2-3 minutes on each side on medium heat until the slices are golden brown.
- Then assemble everything on a plate and enjoy!!

I modified a basic Vegan French Toast recipe from Nora Cooks to make this french toast recipe, I altered her recipe and then I added all the apple pie toppings.
