To make this Chocolate Cherry Healthy Vegan Cheesecake healthier than a regular cheesecake, yogurt is used to reduce fat content and calories. Instead of using refined sugar in this recipe, healthy dates are used to sweeten this cheesecake.
The crust in this cheesecake has only healthy ingredients and has great depth of flavour. The roasted almonds and hazelnuts combined with the raw cacao powder and date sweetener gives it amazing flavour. Chocolate Cherry Healthy Vegan Cheesecake
Ingredients
Cheesecake Filling
- 150 g vegan cream cheese
- 150 g vegan yogurt
- splash of fresh lemon juice
- 1 ½ tsp pure vanilla extract
- 3 tbsp agave syrup
Cheesecake Base
- ½ cup dates approx 8
- ½ cup roasted hazelnuts
- ½ cup roasted almonds
- splash of pure vanilla extract
- pinch of sea salt
- 1 tbsp maple syrup
- 3-4 tbsp raw cacao powder
- 1-2 tbsp coconut oil
Toppings
- raw cacao nibs
- fresh cherries
Instructions
- Add all of the ingredients for the base in a food processor. Mix until the mixture is consistent of small pieces, and sticks together.
- Press the base mixture in a pie form, or small muffin forms if you want mini cheesecakes.
- Spread out a layer cherries on top of the chocolate base.
- Mix all of the cheesecake filling ingredients together in a mixing bowl with a whisk or electric hand mixer. Taste test the mixture to see if you'd like to add more sweetener or lemon, etc.
- Pour the cheesecake filling over the cherries and crust.
- Place the cheesecakes in the freezer until set.
- Once the cheesecakes have set, decorate them with fresh cherries and raw cacao nibs. Enjoy!
