To make these, nuts like pecans and almonds (or a mix!) are coated in a mixture of sugar, spices, butter, and molasses/dark syrup to create a sweet and flavourful glaze. The gingerbread spice blend includes warming spices like cinnamon and ginger. This combination gives the nuts a rich and aromatic flavour reminiscent of traditional gingerbread cookies! Yum!!!

Ingredients

  • 5 cups mixed nuts, choose your favourites! I used pecans, walnuts, hazelnuts, cashews, almonds – all organic nuts from Powerfruits organic from Powerfruits
  • ¼ cup vegan butter
  • 3 tbsp molasses/dark syrup (or maple syrup)
  • ¼ cup brown sugar
  • 2 tsp ceylon cinnamon organic from Powerfruits
  • 1 tsp cardamom
  • 1 tsp dry ground ginger organic from Powerfruits
  • tsp cloves
  • ½ tsp nutmeg
  • 1 tsp organic vanilla organic from Powerfruits
  • pinch of sea salt

Instructions

  • Preheat your oven to 175℃. Prepare a baking tray with a silicon baking mat or parchment paper.
  • Add the butter to a saucepan on the stove on medium heat. Mix so it melts. Once the butter has melted, add the syrup, sugar, spices and salt. Stir regularly until the mixture has thickened and everything has melted together.
  • Add the nuts and stir until all the nuts are evenly coated in the sugar/spice mixture.
  • Spread the nuts out evenly on the baking tray.
  • Bake for 15-20 minutes total depending on your oven. Stir the nuts after about 8 minutes then put them back in the oven to bake the remaining time. They're done when they have started to brown and become fragrant and the sugar starts to slightly bubble.
  • Let the nuts cool completely before enjoying. This is when the sugar coating hardens and then the nuts will be crunchy when they have cooled completely.
  • Once the candied nuts have cooled completely you can break them apart and store them in an airtight container.
  • Enjoy!!
