Healthy Vegan Chocolate Coconut Macaroons
Yes, you read that right, it’s a healthy vegan version of coconut macaroons! Those sweet and chewy cookies with a bit of crunch on the outside…made with healthier ingredients and no condensed milk or egg!
Healthy Vegan Chocolate Coconut Macaroons (GF)
Soft, chewy, delicious macaroons made with healthy ingredients!
Ingredients
- 1 rounded cup shredded unsweetened coconut
- ½ cup almond flour
- 2 tsp coconut milk
- 50 ml maple syrup
- 3 tbsp coconut oil room temperature (soft not melted)
- 1 tsp pure vanilla extract
- pinch sea salt
- ⅓ cup dark chocolate for drizzling approximate amount, can have more or less if desired!
Instructions
- Preheat the oven to 160 degrees celsius.
- Add all ingredients (except chocolate) to a medium sized mixing bowl and combine.
- Once the ingredients are completely combined, scoop the dough onto an oven tray in about 12-14 rounded tablespoon sized balls.
- Bake in the oven for about 14 minutes, remove once they become golden on the edges. Let the macaroons cool completely before adding the chocolate.
- Melt the chocolate in a water bath and drizzle it onto the macaroons (you can even dip the bottom as well if you want more chocolate!) and then let them cool again before storing the macaroons in an airtight container. Enjoy!
