Healthy Vegan Quick Bread – No Yeast No Knead No Butter
Fresh homemade bread baked from scratch, what a way to start your day right? It’s so satisfying. Especially when the bread is vegan, super healthy and requires no kneading and no yeast and rising time! Quick and easy to make, healthy, and delicious, can it get any better??
I love the flavour and texture of this bread because it feels and tastes so hearty and wholesome. It’s very filling and it has so much flavour. The yogurt in the loaf makes it very moist and holds the ingredients together, that’s why this bread doesn’t need eggs or butter/oil in this recipe. It even works with low fat yogurt. It’s amazing, give this bread a try!
Healthy Vegan Quick Bread – No Yeast No Knead No Butter
This loaf of bread is so divine, it's full of flavour, really moist, so quick and easy to bake, and completely healthy!
Ingredients
- 200 ml fibre enriched oats cut, steamed and rolled oats enriched with wheat bran
- 200 ml white flour
- 200 ml graham flour
- 100 ml rye flour
- 150 ml pumpkin seeds
- 150 ml sunflower seeds
- 50 ml chia seeds
- 1½ tsp baking soda
- 1 tsp salt
- 500 ml vegan yogurt
- 50 ml bread dark syrup
Instructions
- Preheat oven to 190 degrees celcius.
- Grease a loaf pan or use parchment paper, pan size about 1.5 liter.
- Mix all of the dry ingredients together in a mixing bowl. Once combined, mix in the syrup and yogurt. Mix together but don't over mix. It should be quite a thick and sticky batter but still quite fluffy.
- Spread the batter into the loaf pan and smooth it out. Sprinkle seeds and oats on the top to decorate.
- Bake the loaf in the lower part of the oven for about 1 hour. Check after about half an hour and cover with foil if the loaf has started to gain too much colour.
- Remove the loaf from the pan to let it cool. Place on a cooling rack and cover with a tea towel.

Smart tip: Sometimes I make two of these at the same time and slice and freeze one of them, it works great! 🙂
