Strawberries and Cream Healthy Breakfast Chia Parfait (Vegan/Gluten Free/Refined Sugar Free)
A delicious and healthy vegan breakfast perfect for any day! This layered parfait is super creamy and absolutely full of strawberry flavour. It’s a dreamy way to start your day! The chia base is full of creamy vanilla flavour. The next layer consists of creamy strawberry yogurt which is sprinkled with granola and strawberry slices. I used my Healthy Everyday Granola recipe for the granola in the parfait which I think pairs together beautifully, but can use whatever kind of granola you have at home of course. And then the whole parfait is topped with strawberry smoothie! Delicious!
I used fresh strawberries for this recipe so I didn’t have any added sugar because the strawberries were perfectly ripe and sweet (helloooo strawberry season!), and a ripe banana in the smoothie. But if you wish you can add maple syrup or perhaps dates in the smoothie to add more sweetness!
This breakfast cup is filled with all sorts of good stuff for you like protein, fibre, and vitamins. It’s perfect for summer days when you don’t want a hot breakfast! Make the chia pudding the night before and you can just top the pudding in the morning with the other ingredients! Perfect! Healthy Vegan Strawberries and Cream Breakfast Chia Parfait
Ingredients
Chia Pudding
- 7-8 tbsp chia seeds
- 2 cups plant milk I used 500 ml oat milk
- 1 tsp pure vanilla extract
- 1 tbsp maple syrup optional
Yogurt Layer
- strawberry vegan yoghurt or vanilla, coconut, or plain flavours work well too
Strawberry Smoothie
- 1 cup strawberries* frozen or fresh
- 1 frozen banana*
Toppings
- fresh strawberries, sliced
- granola *gluten free if needed
Instructions
- Whisk together all the chia pudding ingredients. Mix until the chia seeds are evenly distributed throughout the liquid ingredients.
- Place the chia pudding in the fridge and let the chia seeds expand for minimum 3-4 hours but overnight is usually what I do.
- In the morning make the smoothie in a blender.
- Scoop some chia pudding in the bottom of a glass with strawberry slices, followed by granola, then strawberry yogurt, and then strawberry slices, and topped with strawberry smoothie on top. Sprinkle more granola on top if you wish with more strawberry. Serve immediately. Enjoy!
