The Creamiest Healthy Vegan Pumpkin Pie Oatmeal. This recipe is one of my absolute favourite cold weather breakfasts! It’s something I really look forward to enjoying every fall (and winter!) it’s just that delicious! This recipe has a generous amount of spice and pumpkin to really pack in the maximum flavour. A lot of pumpkin oatmeal recipes I see call for only a tablespoon or so of pumpkin puree, but this is where my pumpkin oatmeal really stands out. I use 50 ml pumpkin puree instead which not only gives loads of flavour, but makes the oatmeal SO creamy! My pumpkin recipe is delicious, quick, and easy. Can this breakfast get any better?? It’s amazing!
The Creamiest Healthy Vegan Pumpkin Pie Oatmeal
Ingredients
- 100 ml oats
- 50 ml pure pumpkin purée
- 100 ml oat milk
- 100 ml water
- generous pinch of pumpkin spice (or a mix of cinnamon, ginger, cardamom, nutmeg, allspice)
- ¼ tsp vanilla extract
- pinch of sea salt
- sprinkle of coconut sugar optional
Toppings
- pumpkin seeds
- maple syrup or date syrup
- oat milk
Instructions
- Stir all the ingredients together in a microwave safe bowl.
- Cook the oatmeal in the microwave for 2-3 minutes.
- Stir again.
- Top with pumpkin seeds, walnuts, maple syrup or date syrup, and oat milk.
- Enjoy!
