Healthy Gingerbread Granola
This Healthy Gingerbread Granola recipe is super festive but also nutritious and delicious! It’s full of gingerbread spice and sweetened with maple syrup. This tasty healthy gingerbread granola is full of healthy proteins and fats from the walnuts, almonds and oats. So this granola will definitely fuel your body at breakfast! I’ve included toasted coconut, and dried cranberry, lingonberry or raisins in this recipe to add sweet and tart flavours. They also add even more texture to the granola. The dried fruit and roasted coconut chips should be added after the granola has been in the oven so they don’t burn. Healthy Gingerbread Granola
Ingredients
- 4 cups oats
- 1 cup almonds
- 1 cup walnuts
- ⅔ cup neutral vegetable oil
- ⅓ cup maple syrup
- 2 tsp ceylon cinnamon
- 1 tsp cardamom
- 1 tsp dry ground ginger
- 1 tsp cloves
- ½ tsp nutmeg
- 1 tsp pure vanilla extract
- a pinch of sea salt
Add after baking the granola
- ½ cup coconut flakes
- ½ cup dried cranberries, dried lingonberries, or raisins choose whichever you prefer all are good 🙂
Instructions
- Preheat oven to 175°C. Prepare two baking sheets with a silicon baking mat or parchment paper so the granola doesn't stick to the pans.
- Add all of the dry ingredients to a large mixing bowl and mix until the spices have been distributed evenly.
- Add the wet ingredients to the bowl and mix until every oat has been covered .
- Pour the granola onto the baking sheets and spread out evenly.
- Bake in the oven for 10 minutes and remove from the oven to stir the granola. After stirring the granola press it down using a spatula. This helps bigger clumps form.
- Bake the granola again for about 8 minutes depending on your oven. Keep an eye on the granola so it doesn't get too much colour and burn.
- Remove the granola from the oven and let it cool undisturbed for about 30-40 minutes.
- Add the dried cranberries/lingon and the coconut flakes. Stir together. Store the granola in airtight containers.
