The waffles are made with spelt flour instead of all purpose flour to provide healthy whole grain nutrients. The waffles have got some crunch but also some creaminess. These waffles are sweet yet balanced with a bit of tart lemon. Yum!!

- 250 ml water
- 350 ml spelt flour or half and half with all purpose flour
- 1 tsp pure vanilla extract
- 200 ml oat milk
- 2 tsp baking powder
- 2 tsp lemon zest
Cheesecake Topping Ingredients
- 150 g vegan cream cheese room temperature
- 5 tbsp vegan whipping cream
- 2 tbsp powdered sugar
- 2 tbsp fresh lemon juice
Toppings
- fresh blackberries
- vegan lemon curd
