Healthy Vegan Dill Hummus Sandwich
This Healthy Vegan Dill Hummus Sandwich is SO delicious and easy to make. It is a super nutritious and well balanced meal. It’s got protein, fibre, healthy vitamins and minerals. This toastie was inspired by some leftover hummus I had in the fridge that I wanted to make ✨fancy✨ so I looked at what else I had available. Then I saw the fresh dill in my herb garden and my garden cucumber! Couldn’t be a more fresh and summery sandwich if I tried. So I added pumpkin seeds as well for added texture and nutrients. Healthy Vegan Dill Hummus Sandwich
Ingredients
- 2 slices wasa crispbread
- 2 big scoops hummus
- about 10 slices cucumber
- one small handful fresh dill
- 1 handful toasted pumpkin seeds
- drizzle of olive oil
- freshly ground black pepper to taste
- sea salt to taste
Instructions
- Take two slices of Wasa Crispbread and slather on some hummus.
- Wash the cucumber and dill.
- Slice thin slices of cucumber and spread them out on the hummus.
- Chop the dill and spread the dill out on the cucumber.
- Sprinkle on some toasted pumpkin seeds.
- Drizzle with olive oil, freshly ground pepper and sea salt.
- Enjoy!
