This Healthy Vegan Dill Hummus Sandwich is SO delicious and easy to make. It is a super nutritious and well balanced meal. It’s got protein, fibre, healthy vitamins and minerals. This toastie was inspired by some leftover hummus I had in the fridge that I wanted to make ✨fancy✨ so I looked at what else I had available. Then I saw the fresh dill in my herb garden and my garden cucumber! Couldn’t be a more fresh and summery sandwich if I tried. So I added pumpkin seeds as well for added texture and nutrients. Healthy Vegan Dill Hummus Sandwich

Healthy Vegan Dill Hummus Sandwich

Ingredients
  

  • 2 slices wasa crispbread
  • 2 big scoops hummus
  • about 10 slices cucumber
  • one small handful fresh dill
  • 1 handful toasted pumpkin seeds
  • drizzle of olive oil
  • freshly ground black pepper to taste
  • sea salt to taste

Method
 

  1. Take two slices of Wasa Crispbread and slather on some hummus.
  2. Wash the cucumber and dill.
  3. Slice thin slices of cucumber and spread them out on the hummus.
  4. Chop the dill and spread the dill out on the cucumber.
  5. Sprinkle on some toasted pumpkin seeds.
  6. Drizzle with olive oil, freshly ground pepper and sea salt.
  7. Enjoy!
